Amman Baptist School Visit

The Royal Academy of Culinary Arts would like to congratulate the 12th graders Hotel Management students from Amman Baptist School who successfully passed the Hospitality Training Program at the Hotel Crowne Plaza, Amman, to prepare them to be motivated and confident decision-makers, who can overcome adversity and realize their potential. Also, RACA welcomed a few additional students from the school to experience a full day on campus and enjoyed classes with RACA students.

The Academy is always proud to be involved with youth and showing them the wonderful opportunities the hospitality industry can create for their career path and future professional life!

RACA hosted the launching ceremony of issuing the guideline for ” Safe Food Handling and Hygiene Standards “

On Wednesday, January 20, 2021, and under the patronage of the General Manager of Jordan Food and Drug Administration , his Excellency Dr. Nizar Mhaidat, the Royal Academy of Culinary Arts hosted the launching ceremony of issuing the guideline for ” Safe Food Handling and Hygiene Standards “, which was developed in cooperation between Jordan Food and Drug Administration (JFDA), The Ministry of Tourism and Antiquities (MoTa), Aqaba Special Economic Zone Authority (ASEZA), Jordan Restaurant Associations (JRA), Jordan Hotels Associations (JHA), USAID BEST, and The Royal Academy of Culinary Arts (RACA).

Dr. Mhaidat assured in his speech that this guideline aims at raising the standards of providing food in the tourism sector by ensuring safe and healthy food for Jordanians and tourists on the territory of the Kingdom while ensuring the communication of the necessary information to managers and employees responsible for food safety in the hospitality and hotel sectors and helping them train and qualify food handlers and food service managers to ensure that food safety protocols and health standards are in place.

For his part, Mr. Jacques Rossel the director of the academy affirmed that ” This collaboration amongst the hospitality and educational sector represented by the various organizations present here today, is a step forward to ensure a food safety culture could thrive in Jordan, and he believes that Jordan will be recognized internationally as a tourism destination for food and service safety”.

At the end of the ceremony, Dr. Mhaidat delivered certificates of appreciation to the team that prepared the guide.

RACA student has been awarded as “Highly Commended 4th place” in the Cake International Virtual Competition

Congratulations to RACA’s talented student Ms. Jude Halaseh, who has been awarded as “Highly Commended 4th place” in the Cake International Virtual Competition “Birmingham – United Kingdom” on November 14, 2020, in the Wedding Cake category, which is considered the world’s largest and most popular sugar craft, cake decorating & baking show! Also, well done Ms. Farah Smadi for her beautiful contribution. The Academy is very proud of its students who participated in this competition for making these beautifully decorated masterpieces!

RACA celebrates the fifth edition of “The Italian Cuisine Week in the World”

AMMAN – On Thursday 26 November 2020, the Italian ambassador to Jordan, His Excellency Fabio Cassese and the Executive Chef Giuseppe Silvestri visited the Royal Academy of Culinary Arts to celebrate the fifth edition of “The Italian Cuisine Week in The World” where the campus director Mr. Jacques Rossel, and the Executive Chef Yousef Iqleim welcomed them. The visit aimed to celebrate Italian Cuisine and culture; Chef Giuseppe cooked one of his signature pasta dishes, while His Excellency Cassese explained the richness of Italian its tradition of gastronomy and the focus on quality ingredients.

EFQM – Accreditation

The King Abdullah II Center for Excellence (KACE), being the representative of the European Foundation for Quality Management (EFQM), awards the Royal Academy of Culinary Arts (RACA) with EFQM’s Committed to Excellence (C2E) 2 Star Certificate.

The Executive Director of the King Abdullah II Center for Excellence, Dr. Ibrahim Al-Rawabdeh, handed over the certificate to the Chairman of the Board of Trustees of the Royal Academy of Culinary Arts His Excellency Dr. Wajih Owais and RACA’s Campus Director Mr. Jacques Rossel.

RACA is the first educational institution specialized in the hospitality sector to achieve (EFQM)’s Commitment to Excellence accreditation in Jordan, as this certificate is a recognition scheme that guides institutions to deliver better results and achieve excellence. This accreditation achieves global recognition of RACA’s commitment to quality standards as per international best practices.

The award ceremony took place at RACA on Tuesday 21st July 2020, with the presence of officials from KACE, RACA board members and officials from USAID Building Economic Sustainability through Tourism Project; which provided the technical support for this project.

Mr. Jacques Rossel, Director of RACA, said: “Since its opening in 2008, the Royal Academy has always pursued its goal to be a model of Excellence in Culinary Education within the local and international market. Over the years, the hospitality sector in Jordan and abroad has recognized and praised the quality of our graduates and RACA has become a trusted source of young trained chefs, ready for this very demanding industry. Providing a market with professional and qualified workforce can only be achieved if RACA operates with the right mindset toward Quality and cascade this way of thinking throughout its organization. We are thrilled of today’s success and our gratitude go greatly toward the King Abdullah II Center for Excellence for their guidance and recommendations, and USAID BEST for their professional advices and technical support.”

Online Learning

In order to ensure a positive experience for all our students, the Royal Academy Of Culinary Arts has implemented an entirely remote, online learning system for the new semester will starts today Sunday 12 April 2020 to ensure our students continuing to receive a high-quality education during the COVID-19 pandemic.

RACAs’ distant learning program will combine both recorded lectures and daily interactive sessions with the instructors, that will offer an optimal learning outcome to our students, at the highest standards considering the situation. Also, The lectures will be delivered through the Microsoft Teams platform and the latest teaching methods trough students Ipads.

Ramadan Recipes

During Ramadan, and COVID-19 pandemic our amazing chefs of the Royal Academy of Culinary Arts shared and cooked three recipes every day from their home. Also, The Royal Academy of Culinary Arts made a competition which is to ”guess the tips” that’s shown in the video, the winner will be announced at the end of Ramadan.
