Celebration of Italian Taste at the Royal Academy of Culinary Arts

On Monday, 14 November 2022, the Royal Academy of Culinary Arts hosted the Italian Chef Renato Bernardi, in collaboration with the Italian Embassy in Jordan and the Italian Trade Agency; to celebrate the Italian Cuisine Week which is held all over the world from the period of 13 to 20 November of each year.
Chef Renato Bernardi, Ambassador of Mediterranean Diet, conducted a culinary workshop at RACA for the students, and introduced them to Cerealia Festival “La Festa Dei Cerali” which is dedicated to the history and importance of rice and grains in all its forms.
The activities of the Italian Food Week were concluded with a Gala Dinner of a four-course menu, all includes rice, prepared by Chef Renato, with the support of RACA’s students who also helped in the service of the event, which was held at RACA and was attended by H.E. Mr. Luciano Bizzotti, the Ambassador of Italy to Jordan, among other VIP guests.
The Royal Academy of Culinary Arts would like to thank the Italian Embassy in Jordan and the Italian Trade Agency for organizing this event and the culinary activities delivered to its students by chef Renato.

The Royal Academy of Culinary Arts graduates 118 new chefs!

Under the patronage of H.E. Mrs. Emilija Georgieva, Ambassador of Switzerland to Jordan, the Royal Academy of Culinary Arts (RACA) held its 13th graduation ceremony on Saturday 12th of November 2022 at the King Hussein Business Park Auditorium; honoring the achievements of 118 graduates. H.E. Dr. Wajih Oweis, Chairman of RACA’s Board of Trustees was present during the event, in addition to Mr. Bill Dewell, the General Manager of Hilton Dead Sea Resort & Spa, among the graduates’ family members and RACA’s management, faculty and employees.

H.E. Dr. Wajih Oweis addressed the graduates and their parents in his remarks where he congratulated them for their achievements, and encouraged them to start their careers in this promising industry to become active youth in the development of the hospitality sector in Jordan.

H.E. Mrs. Emilia Georgieva, delivered a speech to congratulate the graduate chefs for choosing this educational path for its rewarding future and various possibilities it offers. Her Excellency also mentioned the positive and fruitful outcomes resulting from the Swiss dual-education system applied by the Royal Academy through its partnership with École hôtelière de Lausanne (EHL) in Switzerland, the world’s No. 1 University in Hospitality and Leisure Management.

RACA’s Director, Chef Jacques Rossel proudly congratulated the graduates and extended his appreciation to their parents, families and sponsors for supporting them in achieving their dream and passion. He also reflected on the main milestones of their 2-years journey, building their skills and knowledge through the RACA’s values.

The Royal Academy of Culinary Arts is a Technical University College, established in 2008 following the vision of His Majesty, King Abdullah II, to raise the level of education in the Tourism and Hospitality Sector, and reorient young men and women toward education related to the technical market. RACA is a Certified Member of the Network of EHL-certified Schools and offers a Four-Year Bachelor’s Degree in Food & Beverage Management and a Two-Year Diploma in Culinary Arts.

Siniora Visit

A group of RACA’s semester 4 students visited Siniora Food and Manufacturing plc. on the 17th of August 2022 in Sahab, Amman.
This visit is part of the co-curricular activities of the ‘Quality Management and Supervision’ subject that they study in their last semester of the Two-Year Diploma at RACA.
Students went through a thorough explanatory tour at Siniora Food and Manufacturing plc. where they had an idea about the measures and procedures conducted in the factory in terms of maintaining quality in the food industry.

US Embassy Visit

The Royal Academy of Culinary Arts was honored on the 7th of June 2022 with the special visit of the Deputy Chief of Mission at U.S. Embassy Amman, Mr. Mike Hankey.

Mr. Hankey was accompanied by a delegation from the US Embassy, including alumna of the Academy, Chef Dina Abu Qura.

RACA’s Director Chef Jacques Rossel lead the esteemed delegation in a tour around RACA’s campus to introduce them to the various academic and technical facilities, in addition to the academic programs taught at RACA: BA Program in Food & Beverage Management.

RACA School Visits

The Royal Academy of Culinary Arts conducts awareness lectures for the BA Program in Food & Beverage Management in several schools around the Kingdom.

The Royal Academy of Culinary Arts held many awareness lectures at several high schools around the Kingdom to introduce RACA’s programs: the Bachelor’s Program in Food & Beverage Management and the Diploma Program in Culinary Arts. In addition to participating in many University Fairs and Career Days organized by high schools which aim to introduce its students to different study and career options. 

RACA’s awareness lectures have witnessed great interest from school principals, students, as well as university counselors and study advisors. Many inquiries were regarding the Bachelor Program of Food & Beverage Management, as it is a unique program in the region which combines culinary arts and hotel management, and is also accredited by the Jordanian Ministry of Higher Education and by Ecole Hôtelière de Lausanne (EHL), World’s N°1 University in Hospitality and Leisure Management.

Those efforts done by the Marketing & Enrollment Department to hold these lectures and participate in these exhibitions come from RACA’s role and responsibility in spreading awareness about the industry-relevant study programs at a time when the labor market is crowded with graduates from saturated majors, therefore comes the need for professional skills, especially in the hospitality sector which is witnessing continuous development.

The Royal Academy of Culinary Arts graduated 106 new chefs!

On Saturday 22nd of January 2022, the Royal Academy of Culinary Arts (RACA) hosted its 12th graduation ceremony at the Cultural Palace of Al Hussein Youth City under strict COVID protocols. 

H.E. Mr. Lukas Gasser, Ambassador of Switzerland to Jordan, attended the ceremony that gathered the Royal Academy’s Management, Faculty, and employees. Parents of the graduates were also present to witness the great achievement of the Class of 2021 who were receiving their 2-years Culinary Diploma.

The graduating chefs were congratulated by H.E. Lukas Gasser for choosing the Culinary Arts education for its rewarding future career path and various possibilities it offers. He also pointed out that Jordan has a massive potential in Tourism and Hospitality, and this crucial economic sector is a fantastic choice for youth. His Excellency also mentioned the positive and fruitful outcomes resulting from the Swiss dual-education system applied by the Royal Academy through its partnership with École hôtelière de Lausanne in Switzerland, the world’s No. 1 University in Hospitality and Leisure Management.

Graduation ceremony on completing the “Food Safety Implementation And Inspection Guidelines”

RACA holds graduation ceremony of all the participants on completing the “Food Safety Implementation and Inspection Guidelines: Business Point of Contact”  

On Sunday, May 23, 2021, the Royal Academy for Culinary Arts (RACA) held a graduation ceremony for those who completed the workshop on Food Safety Implementation: Business Point of Contact Certification.

The workshop was delivered based on the guidelines for “Safe Food Handling and Hygiene Standards” developed in cooperation with the Jordan Food and Drug Administration (JFDA), the Ministry of Tourism and Antiquities (MoTa), the Aqaba Special Economic Zone Authority (ASEZA), the Jordan Restaurants Associations (JRA), the Jordan Hotels Associations (JHA), USAID Building Economic Sustainability through Tourism Project (BEST), and the Royal Academy of Culinary Arts (RACA).

The aim of the course was to introduce the inspection guidelines to hospitality and food specialists based in business, to be also known as “Points of Contact”. These professionals have now a clear understanding of what is required from them when JFDA inspectors visit their work location. They are also responsible to ensure that the JFDA’s guidelines are being implemented in a manner that protects consumers from potential diseases that can be transmitted through food.

The graduates have thus been supplied with the necessary knowledge and competencies to communicate with managers and employees who handle the food to continuously guarantee that health and safety protocols related to food are being observed at all times in their respective food establishment.

RACA’s Director Chef Jacques Rossel expressed pride in the efforts exerted to make the training a success, also voicing his excitement that RACA had helped train capable young people, highlighting how important their role was when food safety and protecting consumers were concerned.

Inclusive Education Workshop

According to UNESCO, Inclusive Education is the process of removing the barriers limiting the participation and achievement of all learners, respect diverse needs, abilities and characteristics, and that eliminate all forms of discrimination in the learning environment. RACA’s Facilitators had a workshop on Inclusive Education, especially designed by Mr. Rolando Jr. Villamero, Regional Inclusive Education Field Technical Specialist, from Humanity & Inclusion Jordan. The purpose of the workshop was a first step to reflect on how to make Culinary Arts more accessible for all learners.

Congratulations to our talented student Yahia, who was awarded the 1st prize in Sustainability

Congratulations to our talented Yahia Khaled Abu Saad, Student at the Royal Academy of Culinary Arts, who was awarded the 1st prize in Sustainability by the Chef Judges of the 7th International Young Chef Olympiad 2021 (YCO 2021).

YCO is currently the greatest international Olympiads for culinary students, with the participation of candidates representing over 60 countries.

Special thanks to Chef Yousef Al Jabasini and Chef Jihan Sahawnih for their guidance and mentorship during the preparation of the competition!
